Whole Sailor Story:

Harbor Lights marks a first for Old Salt—the debut of our light roast and one of the most remarkable coffees we’ve ever encountered. Sourced from a 150-pound micro-lot known as Rocket Flower, it stood out among more than sixty samples cupped at the El Vergel Estate for its luminous sweetness and floral complexity.

This lot comes from Huver Castillo—a former math teacher turned third-generation farmer—at Finca El Paseo in Buesaco, Nariño, Colombia (1,800 m). Guided by both precision and patience, Huver hand-selects ripe Caturra cherries, pre-ferments them with papaya and coconut husk, and finishes with a meticulous six-day anaerobic fermentation. The result is a cup that scored 90+ on the SCA scale—bright, expressive, and beautifully balanced.

Like the first harbor lights breaking through early-morning mist, this coffee offers a moment of calm after the long voyage—a reminder of warmth, family, and homecoming.
